1/8/2023 0 Comments Strawberry pieTodd Nichols of Nichols Farm and Orchard, in Marengo, Illinois, grows 14 to 15 varieties of strawberries, from Early Glow, which are first to ripen, to Sparkle-small berries that are hard to grow and pick but have intense flavor. The pie is best made with just-picked strawberries, fresh from your garden or the farmer’s market, but when that season is through, choose small fresh organic berries from your grocer. (Guests can add extra whipped cream at table.) You can do that too, or, do as we did and garnish with just a dollop of cream so that the strawberries show more. Hess’s original had several cups of whipped cream on top. We updated the recipe using America’s Test Kitchen’s practice of adding a little pectin to the cornstarch thickener to achieve a glaze that’s neither gummy, nor gelatin bouncy. Our recipe avoids those ingredients and comes closest to the original store version. Many home-cook versions of the pie recipe have circulated since the last Hess’s closed in the ’90s, some with questionable inclusions such as red-food dye or Jell-O. But Max-writing in his 1950s book about Hess’s-said he didn’t care because the pie drew people into the store. Such extravagances meant that the restaurant itself wasn’t profitable. To ensure that the pie was available year-round, Max flew strawberries in from New Zealand, costing him a small fortune. I prepared this tart with only fresh fruits, but you could add a little strawberry confit. You’ll just need to give it a whip before using it. Organizational tip: You can prepare the cream the day before and keep it in the fridge. I also really like this pie with a mascarpone whipped cream instead of the pastry cream. You can flavour it differently or choose another type of cream. This is a very classic recipe for vanilla pastry cream. You can prepare the dough the day before and keep it in the fridge until use (take it out 15 minutes before to soften it). You can make it yourself, or buy a ready-to-use one. You have the choice: shortcrust, shortbread, sweet pastry crust… I chose a sweet crust this time, and I flavoured it with lime zest. This is a real French classic here! I wanted to make up for it with the raspberries but that one hadn’t started yet… Because of the great weather the fruits were early this year, and when we arrived the season was already over. This year was no exception, so we planned a one-day stop on the way back from our vacation. I’ve already told you how much I enjoy picking fruits, and every year we don’t miss the opportunity to go strawberry picking (at l’Île d’Orléans, the best ! ).
